White Chocolate and Berry Cheesecake

The delicious white chocolate and berry cheesecake. A lovely fresh recipe featuring beautiful berries.

A good cheesecake recipes is such a home staple here in Australia don’t you think? Perfect for to take along to a BBQ and much loved by nearly everyone.

This recipe makes quite a light and creamy cake.

I really dislike a stodgy base and so you will need to have a light hand in preparing the base to this recipe. Start by leaving some of the biscuit crumb out of the mixture and only add it in if you want your base to be a little drier.

As a side note, I always use a Marie Biscuit for my biscuit base because that is what I was taught. You could feel free to roam from that if you like and even incorporate a lovely bit of chocolate biscuit. Again, you will have to do some trial and error with your cookie base to get your consistency right. You want it to hold together but not be stodgy so you can add more or less butter/ cookie to make that happen.

Make sure you process your crushed biscuits very finely so that the mixture holds together when you cut.

Make sure your cream cheese is at room temperature and if you are nervous about melting chocolate in the microwave, then don’t do it! The water bath/ stove top is always a gentle and safe way to go.

White Chocolate and Berry Cheesecake Recipe

White chocolate, berries and marscapone combine beautifully in this light, creamy cheesecake recipe.

Ingredients

  • 125 grams butter melted
  • 250 gram biscuits, crushed
  • 100 g white chocolate
  • 1 tablespoon gelatine
  • 1 cup water
  • 1 large pkt cream cheese softened/room temp
  • 1 small mascarpone cheese 250g tub
  • 1 can condensed milk
  • 1 punnet raspberries or strawberries mashed or pureed or
  • - frozen berries work well.
  • Use as much as you want and keep some to decorate

  1. Crush biscuits and mix in the melted butter
  2. Press into lamington tray lined with baking paper or a 23 cm spring form pan if you would like a round cheese cake. 

  3. Refrigerate until set. Around half an hour.

  4. Break the chocolate into pieces, and microwave in short gentle bursts until melted. 

  5. Pour the water into a bowl and sprinkle gelatine over water. Stir through and microwave for 20-30 seconds on high. 

  6. Stir to dissolve.

  7. In a big mixing bowl combine cream cheese, condensed milk and mascarpone. 

  8. Beat until smooth.

  9. Add the melted chocolate and gelatine. Mix well.
  10. Stir in the berries.
  11. Pour over the biscuit base
  12. Refrigerate until set.
  13. To serve decorate with some whole berries and some grated chocolate. 

Recipe Notes

You can make this cake to cut into squares using a lamington tin or wedges using a cake pan.

Ingredients

100g white chocolate

1 tablespoon gelatine

1 cup water

1 large pkt cream cheese, softened/room temp

1 small mascarpone cheese (250g tub)

1 can condensed milk

1 punnet raspberries or strawberries, mashed or pureed or

– frozen berries work well.

(Use as much as you want and keep some to decorate)

 Method

Crush biscuits and mix in the melted butter

Press into lamington tray lined with baking paper

to make slice to cut into squares

or 23cm spring form pan if you want a round cheese cake.

Refrigerate.

Break the chocolate into pieces,

microwave 1-2 minutes until melted.

Sprinkle gelatine over water and

microwave 20-30 secs on high – stir to dissolve.

 In a bowl combine cream cheese, condensed milk,

mascarpone and beat until smooth.

Add the melted chocolate and gelatine. Mix well.

Stir in the berries.

Pour over the biscuit base

Refrigerate until set.

To serve decorate with some whole berries

or some grated chocolate.
