Carrot and Fetta dip

- 5 medium carrots peeled and chopped

- 2 tablespoon of olive oil

- 2 teaspoons of cumin seeds

- ¼ cup of feta
- ¼ cup of feta
- ¼ cup of lemon juice

- 2 teaspoons of honey

- Fresh mint leaves
- Boil the carrots until they are soft and cooked through and then drain.
- Add the olive oil to a pan and then toast the cumin seeds until aromatic. Turn the heat down and add the garlic and gently cook through until soft.
- Add all your ingredients to a blender and pulse until the mixture is smooth and well combined. Season to taste.
- Enjoy.
