Preheat oven to 180 degrees celsius. Line a large baking tray with baking paper.
In a large mixing bowl, combine the oats, almonds, coconut, salt and cinnamon. Mix well. Pour in the honey, coconut oil and vanilla extract and mix well.
Do not add the dried fruit or Chia seeds; we're saving those for later.
Pour the mixture onto your baking sheet and bake for about 15 minutes or until the oats and coconut flakes are lightly golden and fragrant, tossing halfway.
Let the muesli cool completely before mixing in the dried cranberries, pepitas and chia seeds.
Store muesli in a sealed container in the pantry or it can be frozen if you think you will not eat it within ten days.
