Chocolate truffles are the most simple and decadent treat to make. Perfect with a cup of tea or coffee, they can be an indulgent sugar hit in the morning, or an after dinner treat.
This trio of truffles recipe is based on a gorgeous recipe I found for cardamom and orange truffles at SBS Food.
I adapted it and added my own flair. The result was the Trio of Truffles.
Cardamon and Orange Truffles
White choc, coconut and mint truffles.
Chocolate truffles with chilli & strawberry dust.
Here is the base recipe.
Ingredients
150 g dark chocolate, finely chopped
100 g milk chocolate, finely chopped
1 orange
½ cup cream
4 cardamom pods, broken open to release flavour
⅓ cup Dutch cocoa, for coating
Method
Combine the chocolates in a medium bowl and set aside.
Using a vegetable peeler cut off 2 strips of zest from the orange. Combine the zest with the cream and cardamom pods in a small saucepan over a medium heat and bring to a simmer.
Once simmering remove from the heat and cover the cream with the lid of the saucepan. Allow to stand for 30 minutes to infuse the flavours.
Return the saucepan to a medium heat and bring back to a simmer. Strain the hot cream over the chopped chocolates and stir until the chocolate has melted.
Refrigerate until firm and then scoop a teaspoonful of the mixture at a time. Roll into balls.
Dust these with Cocoa.
White Truffles
Substitute dark and milk chocolate for white chocolate.
Infuse cream with green tea or mint.
Roll in coconut after truffles have been formed.
Chocolate Truffles with strawberry dust
Use the same quantities of Chocolate as is in the recipe above, or adjust to suit your own taste.
Heat the cream. You can add a little chilli powder to the cream at this stage if you desire.
Coat the plain chocolate truffles in crushed, dried strawberry dust. These dried strawberries can be bought from the supermarket, in the health food section.
Enjoy.
A word of warning. Chocolate can be tricky to work with as you heat and cool it. Gently, low heat is the best approach.
