I have been buying muesli in a box from the supermarket for a long time, but after messing around with a few home-made nut bar recipes, I discovered that it was really very easy to make my own muesli too.

When I make my own muesli I know exactly what goes into it and I can have it exactly how I like it.

I pop these ingredients onto a tray on a Sunday afternoon, toast it off and then pack it into a jar, as I make my plans for the week ahead. Any extra muesli can be stored in an air tight container in the pantry ready to refill. home made almond & honey muesli recipe

You can also mess around with the fruit and nuts, substituting your favourite nut or dried fruit into the recipe. Craisins are my current favourite fruit but you could add dates, dried figs or even sultanas and raisins.

When you make the muesli, experiment a little with textures. Sometimes I prefer my nuts whole as this it nicer served with yoghurt. The nuts can he chopped or crushed instead if you like a finer texture.

This home-made almond & honey muesli is perfect served with a splash of milk or stirred through your favourite yoghurt.

Ingredients
  • 4 cups of oats
  • ¼ cup of dried coconut
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 3 tablespoons Australian honey or Maple Syrup
  • 2 tablespoons melted coconut oil
  • 2 teaspoons vanilla extract
  • ½ cup of almonds (or any nut really)
  • ½ cup of dried cranberries or other dried fruit
  • ⅛ cup of Chia seeds
  • ¼ cup of pepitas
Instructions
  1. Preheat oven to 180 degrees celsius. Line a large baking tray with baking paper.
  2. In a large mixing bowl, combine the oats, almonds, coconut, salt and cinnamon. Mix well. Pour in the honey, coconut oil and vanilla extract and mix well.
  3. Do not add the dried fruit or Chia seeds; we're saving those for later.
  4. Pour the mixture onto your baking sheet and bake for about 15 minutes or until the oats and coconut flakes are lightly golden and fragrant, tossing halfway.
  5. Let the muesli cool completely before mixing in the dried cranberries, pepitas and chia seeds.
  6. Store muesli in a sealed container in the pantry or it can be frozen if you think you will not eat it within ten days.

I hope you like it. I eat this muesli every day and my kids even like it! (especially that one time where I made it with some added cocoa).
