FullSizeRenderMy sister and I recently won a “mushroom experience” courtesy of Australian Mushrooms and Prahran Market. We were fed, whisked off Parwan Valley Mushrooms to see their mushroom growing sheds and then fed again. You can read more about it by going here, but suffice to say, it was fascinating learning about how mushrooms are cultivated and grown for production with the whole process being much more sophisticated than I had realised. FullSizeRender

Did you know that a mushroom is neither a fruit or a vegetable, rather it is the fruiting body of the mycelium and is actually comes from the third food kingdom, the mushroom kingdom.

Mushrooms also have lots of health benefits and a great nutritional profile as they contain;

  • selenium
  • B vtiamins
  • antioxidants
  • Vitamin D in light exposed mushrooms
  • protein
  • fibre and more.

After witnessing the fascinating process that goes into growing mushrooms, I am determined to use more of this precious ingredient in my cooking. So here are 9 great recipes to inspire more mushroom usage in the kitchen.

  1. Thanks so much for including my recipe in your line up. Your mushroom experience sounds fabulous, I’d love to do something like that. They are one of the few things I have not tried to grow.

  2. Bill Granger has the best ever breakfast mushroom recipe in his ‘Bill’s Food’ cookbook. Done with lemon rind, balsamic vinegar, tarragon, olive oil and butter, served on top of sour dough with goats cheese! So good! My husband grew up foraging for mushrooms and once made an asian mushroom soup from mushrooms collected from under my clothes line! I admit, I was a bit scared we would all be found dead in like a month’s time when people noticed we hadn’t been to school or work, but I live to tell the tale!

    1. That is hilarious Collette! You are brave to eat the soup. What we really wanted to do was go wild foraging. Maybe we will do that next time. I love your mushroom recipe (or Bill’s), it sounds like a perfect combination of flavours.

  3. Mushrooms in risotto with onion, sun dried tomatoes, peas or asparagus and some green leaves at the last minute is my go to mushy recipe. Black pepper and Parmesan to top it off. I love it, but my eldest son recently confessed to picking the mushrooms out and hiding them under the lip of the table! When he was “little” of course.
