Creamy rice pudding with coconut and mango

This is a delicious and creamy rice pudding recipe that my whole family love.

In fact, my children often beg us to make this for them.

There is something quite enjoyable about the process of watching the rice absorb the sweet, creamy and milk and then seeing it merge into one fragrant bowl of deliciousness.

The mango creates a lovely contrast. Feel free to use tinned Australian mango in the colder seasons or dice up a juicy fresh mango in Summer.

This rice pudding is so great to cook in the colder months, but also suitable all year around thanks to the addition of mango and toasted coconut.

You can change the type of fruit that you add, depending on what is in season. Have a think about what you would like and what is fresh and if you think it will complement this sweet and creamy pudding then give it a try.

But for now, give this mango and coconut combination a try because it is so very good

You can also swap the coconut for toasted and chopped nuts.

Creamy Rice Pudding with Coconut and Mango

Creamy vanilla rice pudding with fresh mango and toasted coconut. The perfect Summer dessert.

  • 1 litre of milk
  • 240 ml of cream
  • 60 g of butter
  • I vanilla bean split and scraped
  • 160 g sweetened condensed milk
  • 120 g Arborio rice
  • 1 diced mango or one small tub of diced mango
  • 4 tbsp shredded coconut toasted

Instructions

Method

  1. Use a sharp knife to split the vanilla bean down the middle. Scrape out the seeds. Add the pod and seeds to the milk and cream. Bring milk and cream to the boil, add the rice and turn down the heat to very low.
  2. Stir frequently until rice is soft, about 30 minutes.
  3. Add sweetened condensed milk and butter, continue stirring and cooking for a few more minutes.
  4. Take off the heat. Allow rice to stand in the pot for 5 minutes before serving.
  5. Serve creamy rice with a spoonful of diced mango, and a sprinkling of toasted coconut.

  2. Looks delicious Dani! If only I could eat dairy *sob*. Substitutions just don’t work with some recipes, and I think this one would suffer if substitutions were made.

    1. Hi Deanna. Oh no! No dairy! That would be tough. Yes, it would be hard to find substitutions for this recipe, it is almost built on dairy! My best friend is allergic to dairy. I will have to think up a good recipe that you can both enjoy. Dani xx
